Why is there a bright green part mixed in with my chicken liver sometimes?
The bright green part you sometimes see mixed in with chicken liver is the gallbladder. The gallbladder is a small, pear-shaped organ that stores bile, a fluid that helps digest fats. It is located near the liver, and sometimes a small amount of bile can leak from the gallbladder into the liver during processing. This can give the liver a greenish tinge.
The gallbladder is not harmful to eat, but it can be bitter. If you do not like the taste of the gallbladder, you can simply remove it before cooking the liver. To do this, simply cut away the green part of the liver before slicing or cooking it.
