How do you cold pack green beans?
To cold-pack green beans, you will need:
- Fresh green beans
- A large pot of boiling water
- A bowl of ice water
- A clean jar or jars
- A lid for the jar(s)
Instructions:
1. Wash the green beans and trim the ends.
2. Bring the water to boil. Add the green beans to the boiling water and cook for 2-3 minutes.
3. Drain the green beans immediately and transfer them to the ice water bath to stop the cooking process. Let them cool for at least 5 minutes.
4. Drain the green beans again and pat dry.
5. Pack the green beans into the jar(s). Leave 1 inch of headspace at the top of the jar.
6. Add 1 tsp salt to each jar.
7. Cover the jars with the lids.
8. Process the jars in a boiling water bath for 10-15 minutes.
9. Remove the jars from the water bath and let them cool completely.
The green beans are now canned and will last for up to 1 year.
