What is an easy to make Tzatziki recipe?

Tzatziki

Ingredients:

- 1 1/2 cups (350g) plain Greek yogurt

- 1/2 medium English cucumber, peeled, seeded and diced small

- 1 garlic clove, minced

- 1 teaspoon dried dill or 1 tablespoon chopped fresh dill

- 1 tablespoon extra virgin olive oil

- 1 teaspoon salt, more to taste

- Freshly ground black pepper to taste

Instructions:

1. Using a fine mesh strainer or cheesecloth placed over a bowl, drain the Greek yogurt for at least 30 minutes up to several hours to make it thick.

2. Peel, seed, and dice the cucumber into small pieces. Using a paper towel, squeeze the cucumber as dry as possible.

3. In a large bowl, combine the strained Greek yogurt, cucumber, garlic, dill, olive oil, salt and black pepper. Stir until combined.

4. Taste the tzatziki and adjust the seasonings as desired.

5. Refrigerate for at least 1 hour before serving for the flavours to develop.

6. Serve the tzatziki with your favorite dishes such as grilled meat, vegetables, or as a dip for pita bread or chips.
