Why should chef knives not go in the dish machine?
There are a number of reasons why chef knives should not go in the dish machine.
* Dulling of the blade. The high-speed water jets and harsh detergents used in dish machines can dull the blade of a chef knife.
* Damage to the handle. The high temperatures and harsh chemicals used in dish machines can damage the handle of a chef knife, causing it to crack or warp.
* Spread of bacteria. Dish machines are not designed to sanitize knives, and can actually spread bacteria from one knife to another.
In addition, many chef knives are made of carbon steel, which can rust if it is not properly dried after washing. For these reasons, it is best to hand-wash chef knives with hot soapy water and dry them immediately afterwards.
