Ingredients
* 2 cups water
* 1 cup granulated sugar
* 1/4 cup packed light brown sugar
* 1/2 cup chopped fresh spearmint leaves
* 2 tablespoons freshly squeezed lemon juice
* 1/4 teaspoon salt
* 1 cup half and half
* 1 cup heavy cream
Instructions:
1. Combine the water, granulated sugar, and brown sugar in a large saucepan over medium heat. Bring to a simmer, stirring constantly, until the sugar has dissolved.
2. Remove the saucepan from the heat and stir in the spearmint, lemon juice, and salt. Let the mixture cool for 15 minutes.
3. Strain the mixture through a fine mesh sieve into a large bowl. Discard the solids.
4. Stir in the half and half and heavy cream.
5. Pour the sherbet mixture into an ice cream maker and freeze according to the manufacturer's instructions.
6. Transfer the sherbet to an airtight container and freeze for at least 4 hours before serving.
