What are the four simple steps to preparing food safely?

Here are the four simple steps to preparing food safely, often referred to as the "Four Cs":

1. Clean:

* Wash your hands: Scrub your hands thoroughly with soap and water for at least 20 seconds, especially before and after handling food, and after using the bathroom.

* Wash surfaces: Clean all surfaces, utensils, and cutting boards with hot soapy water before and after preparing food.

* Wash produce: Wash fruits and vegetables thoroughly under running water, even if you plan to peel them.

2. Separate:

* Avoid cross-contamination: Keep raw meat, poultry, seafood, and eggs separate from ready-to-eat foods. Use separate cutting boards and utensils for raw and cooked foods.

* Store properly: Store raw meat, poultry, seafood, and eggs in the refrigerator at 40°F or below.

3. Cook:

* Cook to the right temperature: Use a food thermometer to ensure food is cooked to the safe internal temperature.

* Reheat thoroughly: Reheat leftovers to a safe internal temperature of 165°F or higher.

4. Chill:

* Refrigerate promptly: Refrigerate leftovers within two hours, or one hour if the temperature is above 90°F.

* Maintain proper cold temperatures: Keep your refrigerator at 40°F or below and your freezer at 0°F or below.

By following these simple steps, you can greatly reduce your risk of foodborne illness.
