How to Prepare Pole Beans

Pole beans are a popular vegetable for the home garden, but the tough pods can be difficult to cook properly. Because the large, flat pole bean has such a tough exterior, it needs to be cooked longer than the average green bean. If you're not used to preparing pole beans, it can be discouraging to steam or blanch the beans like a typical green bean only to end up with a woody, inedible dish. However, once you know the right way to cook your pole beans, you'll find that preparation is a breeze.

  • Pole beans
  • Colander
  • Knife
  • Pot
  • Chicken broth (optional)
  • Bacon, ham or onions (optional)
  • Salt and seasonings (optional)

Instructions

  1. Place your pole beans in a colander and rinse them thoroughly under cool running water. Toss the pole beans under the water to rinse away any dirt or debris.

  2. Use a sharp knife to trim the ends of each bean. Remove the stem and the tough end of each bean. Discard the trimmings.

  3. Cut each bean in halves or thirds to create bite-sized pieces.

  4. Simmer pole beans in a pot of water or chicken broth for about 25 minutes, or until tender. Drain the water for simple boiled beans, or add bacon, ham or onions to the chicken broth for an elegant side dish. Add salt and spices to taste, and serve warm or chilled.
