The smokey flavor of barbecued food is highly desirable, especially on a hot summer day. Almost any food can be cooked on a barbecue grill and, whether prepared as an appetizer or entree, mussels are no exception. Because of their availability, quick cooking time and versatility, mussels make the perfect start to an exceptional BBQ.
Things You'll Need
- 1 lb. of mussels
- Stiff scrubbing brush
- Sharp paring knife
- Barbecue grill
- Barbecue grill rack
- Oven mitts
- Heat proof long handled tongs
- Serving plat
- 4 cloves of chopped garlic
- 5 tbsp. of melted butter
- 1/3 cup chopped parsley
- Paprika
- Crusty bread
Instructions
-
Clean and place a barbecue rack on the barbecue grill. Heat the grill to medium.
-
Scrub mussels under cold water. Use a paring knife to cut the beard from the shell of the mussels.
-
Place mussels on the grill. Balance each mussel between the bars on the rack so they are level.
-
Cook for five minutes until the shells open. Remove from the grill onto a plate. Arrange the mussels so they are side by side, not stacked.
-
Mix butter, garlic and parsley together in a small bowl. Do this while the mussels are cooking.
-
Snap the top shell off of the mussels. Pour the butter mixture evenly over mussels. Lightly sprinkle paprika over mussels. Serve with crusty bread.
