How to Quick Brine a Chicken
If you don’t have six to 12 hours before dinner, but you have your heart set on brined chicken, don’t worry. You can speed up the brining process so your chicken will be ready to cook in as little as three hours. Just don’t forget about the soaking chicken – it’ll become super salty if you leave it in the quick brine solution for longer than five hours. Make a simple quick brine or add seasonings, such as lemon and ginger or orange and rosemary, for a moist and tasty chicken.
Things You'll Need
- 2-gallon size seal-able plastic bag
- Large bowl
- Whisk
- 2 cups sugar
- 2 cups kosher salt
- 1 gallon cold water
Instructions

Add 2 cups sugar and 2 cups kosher salt to a large glass bowl. Whisk to combine.

Pour 2 cups of cold water into the bowl and whisk. Add the remaining cold water and stir the mixture with your whisk.

Remove the giblets from your chicken, and insert the chicken into your plastic bag. Add the quick brine mixture.

Seal the bag and set it in the refrigerator for three to five hours.
