How to Preserve Chantrelle Mushrooms

The chanterelle mushroom has a trumpet-shaped cap with a pastel orange color, and is typically found around the world in forested areas. Described as having a flavor similar to apricots, these wild mushrooms are difficult to cultivate and are generally collected from the woods. Preserving chanterelle mushrooms allows you to lock in the tasty aroma for a long time. This is a cost-effective way to enjoy these wild mushrooms throughout the year.

Instructions

  1. Put the chanterelle in a container and pour cool water over them. Lightly rinse and pat them dry with a paper towel. Chanterelles are delicate and can easily break into small pieces if they are handled roughly.

  2. Put the chanterelle mushrooms in a dehydrator. Turn the temperature to between 80 and 90 F for the first two hours. After two hours, turn the heat up to a temperature between 120 and125 F.

  3. Check the chanterelle mushrooms every hour to determine how dry they are. It typically takes four or more hours for dehydration, depending on the moisture content of the mushrooms.

  4. Remove the chanterelle mushrooms from the dehydrator before they are cooled. Place them on a cookie sheet, then carefully place them in an air-tight container when they are cool. Store the container in a cool, dry area, such as the cupboard.
