How to Cook on a Dual Contact Grill

Dual contact grills became popular in the late 1990s, thanks in part to a popular brand of grills sponsored by a former heavyweight boxing champion. These grills, sometimes called panini makers, heat food on the bottom and top simultaneously and allow excess fat to drain off, ostensibly making dishes healthier. Compared to a traditional grill, a dual contact grill cooks twice as fast. Because of its ability to drain excess fat away, meats like hamburger and fatty cuts of steak are the best options for cooking in a dual contact grill, but any food -- chicken, pork chops, fish steaks and vegetables -- that you can grill on a traditional grill works on a dual contact grill.

Instructions

  1. Wipe down the inside of the dual contact grill with paper towel, moistened with water if necessary. Make sure to dislodge any pieces of old food that may be stuck to the grill.

  2. Preheat the grill, which in most cases, will heat to between 350 and 400 degrees Fahrenheit. Allow thicker proteins such as beef or pork to rest at room temperature for at least 15 minutes prior to cooking, which will shorten the cooking time.

  3. Prepare the food that you will be cooking on the grill by adding seasonings and spices to the exterior of the food item; good options for meats include ground black pepper, salt, garlic powder, onion powder, dried oregano, dried rosemary and ground thyme.

  4. Spray both grates of the grill lightly with spray vegetable oil, or dip a paper towel into a small amount of vegetable oil and coat the grill. Place the grease catcher in front of the grill if the unit has one.

  5. Place your food item between the grill surfaces and cook until it reaches the desired internal temperature. Use an instant-read thermometer to determine the internal temperature.

  6. Remove the food and either allow it to rest for 5 minutes before serving or place in a preheated oven to hold while you make additional food on the grill. Turn off the grill after use and discard the grease from the grease catcher.
