How to Cook Caramelized Onions in Bacon Grease
Caramelized onions enhance the flavor of pizza, sandwiches, meat dishes, burgers and a host of other foods. Caramelization occurs while the onion is cooking and the heat browns the natural sugars in the onion. The resulting flavor has been described as smoky, nutty and mildly sweet. While you can use the type onion of your choice, yellow onions with their high sugar content caramelize at least as well as any other. The rich aroma of sauteing onions is certain to whet the appetite of everyone in the house.

- Cutting board
- Knife
- Bacon
- Skillet

Lay the onion on its side on a cutting board. Use a knife to cut off approximately 1/4 inch of the top and bottom of the onion. Make a slit in the outer skin from top to bottom and continue on around the onion. Remove the outer skin and slice the desired amount of onions into approximately 1/4-inch-thick slices.

Fry enough strips of bacon in a large skillet to yield enough grease to fry the onions. When the bacon is well done, remove it from the skillet and set it aside.

Add the sliced onions when the grease is hot and stir the onions over high heat for 5 to 10 minutes then reduce the burner to low-to-medium heat.

Crumble the bacon strips and add them to the onions. Continue to saute the onion mixture, generally 20 to 30 minutes or until the onions are completely limp and have a brown to blackened caramel coloring.
