How to Devein a Shrimp & Butterfly Inside (4 Steps)
Butterflying shrimp before cooking makes for a beautiful presentation and can be done from the back or the inside curve. Typically, shrimp is butterflied from the outside curve, mostly because you are already cutting into the back to remove the unappealing large black vein. However, you can still devein the back, but butterfly from the inside curve, giving your shrimp an attractive butterflied shape with the tail end still curved. A sharp paring knife is all you need to devein and butterfly the shrimp.

Pull the legs off the shrimp, then peel away the shell, leaving the tail portion on for decorative purposes.

Make a shallow slit along center of each shrimp's back with a sharp paring knife to expose the black vein. Lift the vein out of the shrimp with the knife and rinse the shrimp under cold running water to remove any remaining debris.

Turn the shrimp so that the inside curve is facing you and make a cut about 1 inch deep down the center, exposing the inside vein. Remove this vein with the tip of the paring knife as well.

Pull the shrimp apart gently where you cut, so that it looks like an open book and only the tail end is still curved. Repeat with the rest of your shrimp.
