How to Knead Johnny Cake Dough
By using the correct technique to knead smooth and firm Johnny cake dough, you can prevent it from tasting rubbery. Also known as a fried dumpling, Johnny cake can be enjoyed on its own or stuffed with fillers such as cheese, chicken, fish or eggs. Create soft and smooth Johnny cake dough by gradually adding sufficient liquid to the dry ingredients, flouring the dough well while kneading, and letting it rest properly.
Things You'll Need
- Plain flour
- Rolling pin
Instructions
-
Dust plain flour over the surface on which you plan to knead the Johnny cake dough.
-
Transfer the dough on the floured surface and knead it. Press the dough down with your hands and flip it over to knead. Sprinkle a little flour over the dough while kneading, to prevent it from sticking to your hands.
-
Knead the dough for 5 to 10 minutes, or until it is firm, soft and dry.
-
Cover the dough and let it rest for around 20 minutes. Flour your hands and shape 1 1/2-inch balls from the dough. Flatten the balls with your hand or with a rolling pin and fry your Johnny cakes in hot cooking oil.
