Broiled Tomatoes With Bread Crumbs
Tomato slices topped with seasoned breadcrumbs are an easy appetizer that needs only a few minutes under the broiler to cook. Throw them together at the last minute when unexpected guests arrive, and serve them as an after-school snack. Use any kind of tomato and get creative with seasonings for a warm and satisfying dish.

- Sharp chef's knife
- Cutting board
- Baking sheet
- Aluminum foil
- Olive oil
- Parmesan cheese
- Salt
- Pepper
- Garlic powder, optional
- Dried herbs, optional
- Large spoon
Instructions

Turn the oven to the broiler setting and place an oven rack about 6 inches from the heat source.

Cut rinsed tomatoes into slices at least a 1/2-inch thick. Use any variety of medium to large-sized tomatoes, including plums, heirloom and beefsteak. Arrange the tomatoes in a single layer on a baking sheet lined with foil and drizzle lightly with olive oil.

Pour dry breadcrumbs, traditional or panko, into a large bowl, along with an equal amount of shredded or grated Parmesan cheese. Use pre-seasoned breadcrumbs, or season them yourself with salt, pepper and other additions, such as garlic powder and dried herbs.

Spoon the breadcrumb and Parmesan cheese mixture evenly onto each tomato slice, then place the baking sheet in the oven to broil for two to three minutes, just until the breadcrumbs turn golden brown. Add another drizzle of olive oil over the tomatoes before serving.
