How to Slice Prime Rib for Sandwiches (4 Steps)

Carving a freshly roasted prime rib into slices thin enough for sandwiches can be challenging, but is doable with razor sharp chef's knife and a little patience. The sharpness of your knife is imperative to making smooth, clean and thin slices of prime rib that you can pile in between thick sandwich bread. You won't be able to make slices as thin as a professional deli slicing machine can, but with time and patience, you can thinly slice a whole prime rib by hand.

  • Sharp chef's knife
  • Carving fork

      Rest a freshly roasted prime rib at room temperature for least 20 minutes before slicing. Transfer to a clean cutting board.

      Lift the roast so that the bones are vertical. Wedge a sharp chef's knife between the bones and the rest of the roast and slice down into the roast, following the shape of the bones. Save the meaty bones to enjoy later. This step is only necessary if you cooked a bone-in prime rib, however.

      Lay the prime rib on the cutting board so that the grain of the meat is parallel to you. Position your knife on end, going across the grain. Hold the rest of the roast down with a carving fork.

      Slice across the grain of the roast as thinly as you can, no more than 1/8 inch in size. The sharper the knife, the easier it will be to make thin cuts. Continue slicing the rest of the roast, keeping the slices as even as possible.
