How to cook cow heel?

## Cow Heel Soup

Ingredients:

- 2 pounds of cow heels, split

- 1 large onion, chopped

- 3 gloves garlic, minced

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 teaspoon dried oregano

- 1 teaspoon dried cumin

- 1/2 teaspoon ground chili powder

- 1/4 teaspoon ground cayenne pepper

- 2 cups beef broth

- 1 cup water

- 1/ cup chopped carrots

- 1/2 cup chopped celery

- 1/2 cup chopped potatoes

- 1/4 cup chopped green bell pepper

- 1/4 cup chopped red bell pepper

- 1/4 cup chopped cilantro

- 1 lime, cut into wedges

Instructions:

1. In a large pot or Dutch oven, bring the cow heels, onion, garlic, salt, pepper, oregano, cumin, chili powder, and cayenne pepper to a boil over medium-high heat.

2. Reduce heat to low and simmer for 2 hours, or until the cow heels are very tender.

3. Add the beef broth, water, carrots, celery, potatoes, green bell pepper, and red bell pepper to the pot and bring to a boil over medium-high heat.

4. Reduce heat to low and simmer for 30 minutes, or until the vegetables are tender.

5. Stir in the cilantro and lime wedges and serve immediately.

Tips:

* To clean the cow heels, rinse them under cold water and then pat them dry with paper towels.

* You can also add other vegetables to the soup, such as corn, peas, or zucchini.

* Serve the soup with rice, bread, or cornbread.
