How to Substitute Sucanat for Sugar in Muffins
Sucanat -- which stands for sugar cane natural -- is a natural sugar product with minimal processing. Unlike refined white sugar, Sucanat contains all the nutrients naturally found in raw sugar and retains its sweet molasses flavor. Sucanat can replace white sugar for any recipe, but alterations must be made in the case of baking recipes. Since Sucanat has a much higher moisture level than white sugar, it can cause problems in baked goods if it's substituted on a 1:1 ratio without further adjustments.
Instructions

Measure the same amount of Sucanat as the recipe calls for sugar. While the moisture content and weight differs greatly between the two, the same cup measurement should be used.

Decrease the amount of liquid used in the recipe by 1 tbsp. The moisture content of the Sucanat will make up for the decreased liquid.

Mix the ingredients together and bake the muffins according to the directions for the particular recipe.
