Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups old-fashioned rolled oats
- 1 cup raisins (optional)
Instructions
1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheet with parchment paper.
2. Whisk together the flour, baking powder, and salt in a medium bowl.
3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar together until light and fluffy. Add the granulated sugar and vanilla and beat until combined. Add the egg one at a time, beating well after each addition.
4. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats and raisins, if desired.
5. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 12-14 minutes, or until the edges are golden brown and the centers are set.
7. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
