1. Adding alcohol - A small amount of alcohol, such as vodka or rum (½ tablespoon per quart of ice cream base) can help lower the freezing point of the mixture.
2. Using corn syrup - Adding corn syrup to the ice cream base can also help prevent the ice cream from becoming excessively hard.
3. Storing in a double-sealed container - This can help prevent air from entering the container, which can cause the ice cream to dry out and become hard.
4. Removing air bubbles - After churning the ice cream, tap the container on the counter a few times before placing it in the freezer to remove any air bubbles.
5. Tempering ice cream - Before serving, allow the ice cream to soften for a few minutes at room temperature.
