How do you freeze struffoli?
1. Freeze on a sheet pan. Shape and fry your struffoli according to the recipe, then allow them to cool completely on a towel-lined surface or a wire cooling rack. Once completely cool, transfer them to a sheet pan lined with parchment paper and lay them in a single layer ensuring that they are not touching each other.
