How to Cook Center-Cut Beef Loin in the Oven (9 Steps)

When you splurge on a pricey piece of beef like center-cut beef tenderloin, you want to make it right. Cut from the loin area underneath the ribs, the tenderloin is extremely tender, and ideal for roasting in the oven. Seasoning and monitoring the beef temperature closely will ensure a melt-in-your-mouth beef tenderloin cooked to perfection.

Things You'll Need

  • Center-cut beef tenderloin
  • Chef's knife
  • Paper towels
  • Seasonings, to taste
  • Onions
  • Roasting vegetables, (carrots, potatoes, mushrooms)
  • Roasting rack
  • Roasting pan

Instructions

  1. Trim any excess fat from the tenderloin and dry as much as possible with paper towels.

  2. Preheat your oven to 500 degrees Fahrenheit.

  3. Season the tenderloin generously with salt and other seasonings of your choice. For example, you could create a rub with spices such as black pepper, garlic powder, coriander, paprika and cayenne pepper. You can also add fragrant herbs such as rosemary and thyme.

  4. Place the beef tenderloin in a roasting pan set on a roasting rack.

  5. Add sliced onions and vegetables such as carrots and potatoes around the roast.

  6. Place the roast in the oven to brown. A 2- to 3-pound roast should take about 15 to 20 minutes to brown.

  7. Reduce the heat of the oven to about 300 F and stir vegetables to allow for even cooking. Continue to roast the tenderloin. It should take roughly 35 to 50 minutes per pound to cook the tenderloin.

  8. Remove the roast from the oven and transfer to a platter when it is within five degrees of your desired level of doneness. While it is resting, the temperature will continue to rise the five additional degrees to reach your desired temperature. The USDA recommends beef reach a temperature of at least 145 F for safe consumption, which is medium rare. For medium, cook to 160 F.

  9. Slice the beef tenderloin into one-inch thick pieces to serve.
