Kebabs in the Oven

Ingredients:

- 1-1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces

- 1/2 cup plain yogurt

- 1 tablespoon vegetable oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1/4 cup chopped fresh cilantro

- 1/4 cup chopped red onion

- 1/4 cup chopped green bell pepper

- 1/4 cup chopped yellow bell pepper

- 8 bamboo skewers, soaked in water for at least 30 minutes

Instructions:

1. In a large bowl, combine the chicken, yogurt, vegetable oil, cumin, coriander, salt, and pepper. Mix until the chicken is well coated.

2. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.

3. Preheat the oven to 400 degrees F (200 degrees C).

4. Thread the chicken pieces onto the skewers, alternating with the vegetables.

5. Place the skewers on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through.

6. Sprinkle the kebabs with cilantro and serve immediately.

Tips:

- If you don't have bamboo skewers, you can also use metal skewers.

- To make the kebabs even more flavorful, marinate the chicken in the yogurt mixture for longer.

- You can also add other vegetables to the kebabs, such as tomatoes, zucchini, or eggplant.

- Serve the kebabs with your favorite dipping sauce, such as tzatziki sauce or hummus.
