How to Bake Jiffy Muffins in a Microwave
Jiffy Mix began in a small town in Michigan in 1930. Today you can buy Jiffy muffin mix in the familiar little blue box in all 50 states. Each box makes enough for six regular-sized muffins, making it a popular choice for singles and smaller families. If you want hot Jiffy muffins in the morning, but you're short on time, try baking them in the microwave instead of the regular oven.

- Jiffy mix
- Egg
- Milk
- Bowl
- Spoon
- Silicone muffin pan or custard cups (microwave-safe)

Pour Jiffy muffin mix into a bowl. Add an egg and the correct amount of milk, following the directions on the package. Stir the mixture until the larger lumps blend in.

Spray microwave-safe muffin cups or custard cups with a liberal coating of cooking spray. Add cupcake paper liners if you wish. Fill the cups half full with muffin mixture.

Bake your muffins in the microwave. The time depends on how many you are cooking. For one or two muffins, cook them 20 to 30 seconds. If you are making half a dozen, microwave the muffins from 60 to 90 seconds.

Use an automatic turntable in your microwave, or turn the muffins when they're halfway through their cooking time.

Pull the muffins out and test them by sticking a toothpick into the center of one. If the toothpick comes out dry, the muffins are done. If not, put the pan back and microwave for another 20 seconds before testing them again.
