What do you when some egg yolk get into the pavlova mixture?
Do the following :
- Separate your utensils and bowls - It's important to use separate utensils and bowls for the egg whites and the yolks. Any traces of egg yolk in the egg whites will prevent them from whisking properly.
- Use a fine-mesh sieve -If you accidentally get some egg yolk into the egg whites, don't panic. strain the egg whites through a fine-mesh sieve to remove any yolk that may have seeped in.
- Continue whisking the egg whites - Keep whisking the egg whites until they reach stiff peaks. This will ensure that the egg whites have been properly aerated and will rise during baking.
