How to Convert Extra Large Eggs to Large Eggs
Extra large eggs weigh a little more than large eggs. Large eggs equal 2 liquid oz. each and extra large eggs equal 2.25 oz. each. To make the conversion, the eggs should be whipped to evenly blend the white and yolk of the egg together. According to the United States Department of Agriculture (USDA), store bought shell eggs can keep for three to five weeks in a refrigerator at 40 degrees Fahrenheit. To check your eggs for freshness, place the egg in water, if it sinks, it's fresh, if it floats it should be discarded.

Crack the extra large eggs into the bowl and whip them with a fork until it is a smooth mixture with no strings from the white of the egg remaining.

For each large egg called for in your recipe, measure 1/4 cup of whipped eggs.
