Physical change.
When making eggnog, the ingredients (milk, cream, eggs, sugar, spices) are mixed together and then heated. This causes the milk and cream to denature, the eggs to coagulate, and the sugar to dissolve. These are all physical changes because the chemical composition of the ingredients remains the same.
