How many hours can cold food be held without refrigeration before it must sold served or thrown out?
According to the FDA Food Code, perishable cold food that is potentially hazardous (such as cooked meat, fish, eggs, dairy products, etc.) can only be held without refrigeration for a maximum of 4 hours. After 4 hours, the food must be discarded or cooked and then cooled rapidly and held at 41°F or below.
