Ingredients:
* 1 medium butternut squash (about 2 pounds)
* 1/4 cup butter (or olive oil)
* 1/4 cup milk (or cream)

* 1/4 teaspoon black pepper (or to taste)
* 1/4 teaspoon nutmeg (optional)
* Pinch of cinnamon (optional)
Instructions:
1. Prepare the squash: Preheat oven to 400°F (200°C). Cut the butternut squash in half lengthwise. Remove the seeds and any stringy bits. Place the cut squash face down on a baking sheet.
2. Roast: Roast for 45-60 minutes, or until the squash is fork tender.
