How to Bake Whole Grain Corn Bread (3 Steps)

Corn Bread is a New World food because it has a Northern European Culinary Heritage. History shows that the New Settlers had to "make do" with using ground corn meal when ground whole wheat was in short supply. What did they do? They made Corn Bread. Whole Grain Corn Bread is a healthier choice for a starch served with dinner in comparison to white bread or rolls.

Things You'll Need

  • 1-1/2 cups whole grain corn flour
  • 1-1/2 cups whole wheat flour
  • 2-1/2 teaspoons of baking soda
  • 3 tablespoons of honey
  • 1-1/2 cups low fat buttermilk
  • 1/4 cup of canola oil
  • 2 eggs, well beaten
  • 8-inch square baking dish or pan

Instructions

  1. Preheat oven to 400 degrees. Spray 8-inch square dish or pan with non-stick cooking spray or grease with butter. Set aside.
    In a large bowl, mix 1-1/2 cups whole-grain corn flour, 1-1/2 cups whole wheat flour, 2-1/2 teaspoons of baking powder, 1/4 teaspoon of Paprika,
    3 tablespoons of honey. Use whisk or spatula to mix.

  2. In a small bowl combine remaining ingredients: 1-1/2 cups low-fat buttermilk, 1/4 cup of canola oil and two well beaten eggs. Pour this mixture into the large bowl of dry ingredients. Mix well.

  3. Pour the whole grain corn bread batter into the greased 8-inch square baking dish or pan. Bake for 25 minutes in 400 degree preheated oven. Remove from oven. Cut into squares and serve. This corn bread recipe should make 8 - 9 servings.
