What is a recipe for collared greens?

Classic Southern Collard Greens Recipe

This recipe is a simple and flavorful way to cook collard greens, perfect for a hearty side dish.

Yields: 6 servings

Prep time: 20 minutes

Cook time: 1 hour

Ingredients:

* 1 bunch collard greens, washed and stems removed

* 1/2 cup smoked ham hock (or bacon, or salt pork)

* 1 large onion, chopped

* 2 cloves garlic, minced

* 1 cup chicken broth (or water)

* 1/4 cup apple cider vinegar

* 1 teaspoon salt

* 1/2 teaspoon black pepper

* 1/4 teaspoon red pepper flakes (optional)

* 1 tablespoon olive oil

Instructions:

1. Prepare the greens: Chop collard greens into bite-sized pieces.

2. Cook the ham hock (or bacon, salt pork): Place the ham hock (or bacon, salt pork) in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes.

3. Sauté the onion and garlic: While the ham hock cooks, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.

4. Add the greens and liquid: Add the chopped collard greens to the skillet, stirring to coat with the onion and garlic mixture. Pour in the chicken broth (or water), apple cider vinegar, salt, pepper, and red pepper flakes (optional). Stir well.

5. Cook the greens: Transfer the greens and liquid to the pot with the ham hock. Bring to a boil, then reduce heat and simmer, covered, for 1 hour, or until the greens are tender.

6. Serve: Remove the ham hock from the pot (or bacon, salt pork) and shred the meat. Return the meat to the pot. Serve hot with a dollop of butter or a drizzle of olive oil if desired.

Tips:

* For a richer flavor, use smoked ham hock or bacon.

* You can substitute chicken broth for water, but it will add more flavor.

* If you don't have apple cider vinegar, you can use regular white vinegar.

* Add a pinch of sugar to balance the acidity of the vinegar.

* Add a few dashes of hot sauce for a kick.

* Serve with cornbread or biscuits for a complete meal.

Enjoy!
