Ulster Vegetable Roll Ingredients:

For Pastry:

- 1 teaspoon salt

- 2/3 cups cold unsalted butter, cubed

Instructions:

1. Make Pastry: In a large mixing bowl, combine flour and salt. Add cold cubed butter and use your fingertips to work the mixture until it resembles coarse crumbs.

2. Gradually add ice water, one tablespoon at a time, until the mixture just comes together and forms a ball. Be careful not to overmix.

3. Wrap the pastry dough in cling film and refrigerate for at least 30 minutes.

4. Prepare Filling: While the pastry dough is chilling, prepare the filling. Melt butter in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

5. Add the grated carrot, parsley, grated potato, and shredded cabbage. Mix everything well. Season with salt and pepper to taste.

6. Cook the filling over medium heat for 10-12 minutes, or until the vegetables are tender. Let the filling cool completely.

7. Assemble the Vegetable Roll: Preheat the oven to 400°F (200°C). Prepare a baking tray and sprinkle some flour on it.
