How to Make Butternut Squash Fries
If you love French fries, but are watching your waistline, then you have to try this recipe for butternut squash fries. A bit sweet, and a bit savory, they'll have your mouth watering for more. Here's how to make them.

Pre-heat your oven to 425 degrees.

Spread foil over your baking sheet. Then spray your baking sheet with non-stick spray.

Peel your butternut squash. This can be a tad tricky as the skin of a butternut squash is tough and thick. But using your vegetable peeler and a little elbow grease, you'll be able to skin it in minutes.

Clean out the seeds from your butternut squash. Once you have it peeled, use a butcher's knife to cut the squash in half. You may need to bang the squash on a hard surface to get the knife all the way through. Once you've split the squash, use your hands and warm water to clean away the seeds.

Cut the two halves of your butternut squash into fry shapes. The initial cut through the squash is the hardest. Using your knife, make long strips that are about 1/3 to 1/2 of an inch wide.

Arrange your butternut squash fries on your baking sheet in a single layer.

Drizzle fries with a generous amount of olive oil. Then sprinkle with a few pinches of salt to taste.

Pop your butternut squash fries in the oven for 45 minutes or until lightly brown. Their texture should be crispy on the outside and moist on the inside. Serve hot.
