Spices That Go Well With Eggplant
Eggplant is the family of nightshade vegetables originally from India. Eggplant is large with purple, purple and white or white-hued skin. The inside of the eggplant consists of a creamy, mild, sometimes slightly bitter pulp with a few tiny seeds scattered within. It's used in Italian, Thai, Middle Eastern and Indian cuisine. Eggplant's mild flavor can act as a foil to many assertive seasonings.
