How to Thicken Watery Pate
Pate is a thick spread often made from duck or chicken livers and molded into a loaf shape. Some vegetarian pates are made from vegetables, grains or seeds. Pate is served as an appetizer with crackers or bread. If the pate isn't thick enough, it is difficult to serve and can look unappealing. A bit of cornstarch can thicken the pate and get it ready to serve, but don't use too much. It could ruin the texture and flavor.

Add a small amount of cornstarch, about 1/8 tsp., to the pate while it is cooking. If it has already been cooked, sprinkle the cornstarch into the pate while it is in the blender.

Mix the cornstarch into the pate by stirring it constantly.

Set the finished pate in the refrigerator to cool. The pate will solidify as it cools and become thicker.
