Ingredients:
- 1 head of green cabbage, shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped

- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 (28 oz.) can diced tomatoes with juice
- 1 (14.5 oz.) can low-sodium chicken broth
- 1/2 cup water
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the chopped onion, garlic, green bell pepper, red bell pepper, celery, and carrots and cook until the vegetables are softened, about 5-7 minutes.
3. Add the shredded cabbage, tomatoes, chicken broth, water, and bay leaf.
4. Bring the soup to a boil, then reduce heat to low and simmer for at least 30 minutes, or until the cabbage is tender.
5. Season the soup with salt and pepper to taste and serve hot.
Tips:
- If you prefer, you can skip using the bay leaf.
