Albondigas means "meatballs" in Spanish. This Mexican soup recipe originally comes from the Middle East via Southwestern Europe. Albondigas is a delicious Mexican meatball soup that can be made in many different ways. Some people choose to use a tomato sauce, however, this particular recipe uses a beef broth base. Albondigas is a wonderful dish to serve on a cold winter day or on a special occasion.

  • 4 diced potatoes
  • 1 chopped onion
  • 1 diced carrot
  • 1 jalapeño
  • ½ gallon water
  • 1/3 cup rice
  • 6 beef bouillon cubes
  • 4 chicken bouillon cubes
  • 1 dash of garlic powder
  • 1 ½ lbs. lean ground beef
  • ¼ cup of flower
  • Seasoned pepper
  • 1 tsp dried oregano
  • 1 tbsp dried cilantro

  1. Chop the onion and carrot. Dice the potatoes, leaving the skin. Slice the jalapeño lengthwise and do not remove the seeds, as this is what adds spice to the soup. Put aside the flour, seasoned pepper, and ground beef. Add the rest of the ingredients to a large pot and bring the ingredients to a boil. Turn down to a simmer.

  2. While the ingredients are simmering, prepare the ground beef. Mix the flour and lean ground beef with 2 tbsp of seasoned pepper. Roll the beef into small walnut-sized meatballs.

  3. Carefully add the meatballs into the simmering ingredients. Continue to simmer the Albondigas soup for 30 to 40 minutes or until the meat and vegetables are cooked thoroughly.
