Cream of Tomato Soup Base
* 2 tablespoons butter
* 1/2 cup chopped onion
* 1/2 cup chopped celery
* 1/2 cup chopped carrot
* 1 (28-ounce) can diced tomatoes, undrained
* 1 (14.5-ounce) can chicken broth
* 1 cup half and half
* 1/4 cup grated Parmesan cheese
* Salt and pepper to taste
* Garnish: Sour cream, chopped parsley, croutons
Instructions
1. Melt the butter in a large pot over medium heat.
2. Add the onion, celery, and carrot and cook until softened, about 5 minutes.
3. Add the tomatoes, chicken broth, half and half, Parmesan cheese, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 15 minutes or until heated through.
5. Garnish with sour cream, chopped parsley, and croutons before serving.
