Instructions

Step 1: Make the Dough

1. Mix the flour and salt in a large bowl.

2. Cut in the cold butter until the mixture resembles coarse crumbs.

3. Beat one of the eggs in a small bowl, then add to the flour mixture.

4. Mix until just combined (be careful not to overwork the dough).

5. Form the dough into a ball, wrap in plastic wrap, and chill in the fridge for at least 1 hour.

Step 2: Make the Filling

1. Heat some olive oil in a pan over medium heat.

2. Add the ground beef and cook until browned, breaking up any clumps.

3. Add the diced onion and minced garlic and cook until the onion is softened.

4. Season with cumin, chili powder, salt, and pepper.

5. Stir in the optional ingredients (green olives and raisins) if desired.

6. Remove from the heat and let the mixture cool completely.

Step 3: Assemble the Empanadas

1. Preheat the oven to 350°F (175°C).

2. Remove the dough from the fridge and divide it in half.

3. On a floured surface, roll out each half of the dough into a thin circle.

4. Cut out circles using a biscuit cutter or a drinking glass.

5. Place a spoonful of the filling in the center of each circle.

6. Fold the dough over the filling and crimp the edges with a fork to seal.

Step 4: Bake the Empanadas

1. Place the empanadas on a baking sheet lined with parchment paper.

2. Brush the tops with the remaining beaten egg.
