How to Can Salsa

Ingredients:

* 10 pounds tomatoes, peeled and chopped

* 2 pounds onions, chopped

* 2 pounds green peppers, chopped

* 1 pound fresh cilantro, chopped

* 1/4 cup lime juice

* 1 tablespoon salt

* 1 teaspoon sugar

* 1 teaspoon ground cumin

* 1/2 teaspoon ground chili powder

* 1/4 teaspoon cayenne pepper

Instructions:

1. In a large pot, combine the tomatoes, onions, green peppers, cilantro, lime juice, salt, sugar, cumin, chili powder, and cayenne pepper. Bring to a boil over medium heat, stirring occasionally.

2. Reduce heat to low and simmer for 1 hour, stirring occasionally.

3. Ladle the salsa into hot, sterilized jars, leaving 1/2 inch of headspace at the top of each jar.

4. Wipe the rims of the jars with a clean, damp cloth.

5. Place the lids on the jars and screw the rings down until they are fingertip tight.

6. Process the jars in a boiling water bath for 15 minutes.

7. Remove the jars from the water bath and let them cool completely.

8. Store the salsa in a cool, dark place.

Tips:

* To peel the tomatoes, cut a small X in the bottom of each tomato. Place the tomatoes in a boiling water bath for 30 seconds. Remove the tomatoes from the water bath and let them cool slightly. The skins should then slip off easily.

* If you do not have a boiling water bath canner, you can also process the salsa in a pressure cooker. Follow the manufacturer's instructions for processing salsa in a pressure cooker.
