Ingredients:
- 1 cup bulgur wheat
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh parsley

- 2 tomatoes, chopped
- 1 cucumber, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice

1. Rinse the bulgur wheat in water and drain. In a mixing bowl combine bulgur wheat with 2 cup water and soak for 20 minutes or until bulgur is tender. Drain any excess water.
2. In a large bowl, combine the mint, parsley, dill, green onion, tomatoes, and cucumber.
3. Add the bulgur, olive oil, lemon juice, salt, and pepper.
4. Toss to combine and chill for at least 1 hour before serving.
