I am making white bean hummus and recipe does not specify whether to cook the beans before hummus?
White beans should be cooked before making hummus. Most hummus recipes call for canned chickpeas, which are already cooked. However, if you are using dried white beans, you will need to cook them before you can make hummus.
To cook dried white beans, rinse them and sort them, removing any debris or damaged beans. Then, soak the beans in cold water for at least 8 hours or overnight. After the beans have soaked, drain them and rinse them again.
Place the beans in a large pot and cover them with fresh water. Bring the water to a boil, then reduce the heat and simmer the beans until they are tender, about 1 hour. Drain the beans and set them aside.
