Is it bad to eat potatoes that are browning?
Potatoes that have turned green or have sprouted should not be eaten. The green colour and sprouts indicate the presence of solanine, a toxic compound that can cause gastrointestinal problems such as nausea, vomiting and diarrhea. It is important to discard any potatoes that have these signs.
Regular browning of the potato skin due to exposure to light or age is generally harmless. However, it's still advisable to cut away the browned portions before cooking to avoid any bitterness.
