How to Use Cooked Rice for Spanish Rice

Spanish rice gets its signature red color and spicy flavor from a variety of savory ingredients, including tomatoes, cumin and chili powder. You can serve the versatile rice as an accompaniment to any type of Mexican dish, such as burritos, enchiladas, tacos and fajitas. If you have leftover cooked white rice in your refrigerator from a previous meal, use it to make quick and simple Spanish rice. Using leftover rice in another meal is an ideal way to stretch your grocery budget.

Things You'll Need

  • Saucepan
  • 1 tbsp. olive oil
  • 1 chopped onion
  • 1 chopped green and 1 chopped red bell pepper
  • 2 minced garlic cloves
  • 1 cup diced fresh or canned tomatoes, undrained
  • 1 tsp. paprika
  • 1 or 2 tsp. chili powder
  • Salt and ground black pepper to taste
  • 3 cups cooked long grain white rice

Instructions

  1. Heat olive oil in a saucepan over medium-high heat. Add chopped onion, chopped green and chopped red bell pepper and minced garlic cloves to the pan. Saute the ingredients for 5 minutes, or until the onion is soft and opaque.

  2. Pour in tomatoes. Sprinkle in paprika and 1 or 2 tsp. of chili powder, depending on how spicy you want the Spanish rice to be. Add salt and ground black pepper to taste.

  3. Reduce the heat to "low' and simmer the mixture for 10 minutes.

  4. Add cooked long grain white rice to the saucepan and stir the ingredients to blend. Cook the mixture over low heat for five minutes or until the rice is heated through.
