How to Make an easy marinade for pork and chicken
How to make a marinade or sauce, good for chicken, pork, fish, even sandwiches.
I seldom make anything with exact measurements. You will want to try this and adjust the quantities to match your desired flavor. This base will get you started.
Things You'll Need
- 1 cup mayonnaise
- 2 TBLS lime juice (can substitute lemon juice)
- 3 TBLS chopped fresh cilantro (or any other fresh herb)
- 3 cloves garlic, finely chopped
- 2 tsp. chili powder

Mix the ingredients in a bowl...you can prepare up to a few days in advance, it just gets better if you put in the refrigerator. Save some in a serving bowl to put on the table later.

TO BBQ or Bake: Place some of the mixture on pork chops, fish or chicken before you BBQ. Or you can top the meat with a heavy coating, put into a baking dish and slide into a pre-heated 350% oven uncovered for 50-60 minutes. The mayo seals the meat nicely, and you end up with very juicy meat with a nice subtle flavor.
