How to Make Chicken Chili

Chicken chili can be a work-intensive dish where a chili recipe uses chicken instead of beef. Those recipes call for chili powder, cayenne pepper and tomatoes. This easy version skips the extras and combines chicken and green chilies.

Things You'll Need

  • 4 boneless chicken breasts
  • 2 tsp. soy sauce
  • 1 tsp.sugar
  • 1 tbsp. vegetable oil
  • 2 cups chicken broth
  • 2 scallions-diced
  • 5 diced green chilies
  • 5 garlic cloves-crushed and chopped
  • 1 egg
  • 2 tbsp. corn starch
  • Large pot
  • Frying pan
  • Plastic bag

Instructions

  1. Clean the chicken with salt and cold water. Combine the soy sauce, a large egg, flour and corn starch in a large bowl. Place this mix in a large plastic bag.

  2. Put each piece of chicken in the bag. Shake the bag until the coating gets over each piece. Put the bag in the refrigerator for 15 minutes.

  3. Add the oil to a large pot. Fry the chicken on each side until it is brown and set it aside.

  4. Add the garlic and chilies and saute' them together. Add the chicken broth and water. Bring it to a boil, then let it simmer for an hour on low heat.

  5. Add the sugar and salt and pepper to taste. Simmer for another 30 minutes. Serve with rice and garnish with parsley.
