Where did string cheese come from?

The exact origins of string cheese are not known, however it is believed that its roots can be traced back to the Middle East, where it has been made for centuries. String cheese is also known as caciocavallo in Italian, which means "horse cheese". It is believed to have originated in southern Italy, where it is still a popular snack. The cheese was traditionally made by stretching the curds of fresh cow's milk and then twisting them into a long, thin string. This string would then be coiled and placed in a brine solution to prevent it from drying out.
