What is mozzarella cheese made of?

Mozzarella cheese is traditionally made from Italian buffalo milk, but it can also be made from cow's milk. The milk is heated and then rennet, a natural enzyme found in the stomachs of young animals, is added to cause it to coagulate. The curds are then cut and heated gently until they reach the desired consistency. The curds are then stretched and kneaded to create a smooth, elastic texture. The mozzarella is then shaped and either left to cool and harden or placed in a brine solution.
