How can you freeze cheese?
Hard Cheese
1. Cut it. Hard cheeses like parmesan and cheddar can withstand freezing, but slicing or shredding them before storing will help them thaw more quickly.
2. Wrap portions tightly. Wrap each piece in parchment paper. Add foil or plastic wrap to block out air.
3. Freeze for up to 8 months. Freeze all types of hard cheese for up to 8 months.
Soft Cheese
1. Dry it out. Soft cheeses, like mozzarella and Brie, hold a lot of moisture, which can interfere when frozen. Help these types of cheese freeze better by allowing them to dry out first. Cut into 1-inch cubes and spread on a baking sheet lined with paper towels. Set in the refrigerator for 24 hours. Pat dry with more paper towels.
2. Wrap and freeze for up to 6 months. Wrap tightly with plastic wrap; place into a freezer-safe bag. Cheese will keep better if you squeeze out as much air as possible. Freeze soft cheese for up to 6 months.
3. Thaw in the refrigerator. Move the cheese to the refrigerator to thaw for at least 12 hours before using it again.
