How to Serve Double Cream Brie

Brie is a soft cheese with a thick, edible rind, and is often sold in wheels. Double cream refers to the exceptional richness from extra cream used in the recipe to achieve a minimum of 60 percent fat. This differs from triple cream Brie cheese with 75 percent fat. To fully appreciate the flavor of the cheese, warm it wrapped in pastry. The pastry bakes to a golden brown and holds the softened cheese inside.

Things You'll Need

  • 1 frozen puffed pastry sheet, thawed
  • Baking sheet
  • Parchment paper
  • Fork
  • Pastry brush
  • 1 beaten egg
  • French bread or crackers

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Remove an 8 oz. wheel of Brie from the refrigerator and allow it to come to room temperature.

  3. Set the Brie in the middle of the puff pastry sheet.

  4. Bring the corners of the pastry to the center of the Brie and flip over the brie while you move it to a parchment paper-lined baking sheet. The pastry should be smooth on the top and sides of the Brie with the overlap point of the edges under the Brie.

  5. Use the pastry brush to brush the beaten egg over the puff pastry.

  6. Bake the wheel of Brie for 20 to 25 minutes or until the pastry is golden brown. Cool to room temperature and serve with French bread.
